  3. To make the marinade, stir together the vegetable broth and soy sauce in a shallow pan. Marinate the tofu in the vegetable broth mixture for at least 10 minutes.
  4. Prepare 3 bowls: one with the flour, one with panko bread crumbs and spices, and one with the flax eggs. Coat the tofu in the flour, then the flax eggs, then the panko.
  5. Bake at 400 degrees F on the parchment lined baking sheet for 15 minutes. Carefully flip the tofu bites over, then bake for another 15 minutes. They're ready when golden brown and crispy.

INSTRUCTIONS

  1. In a large Dutch oven or soup pot, combine the garlic, bay leaves, cumin, 1 � teaspoons of the salt and about 20 twists of freshly ground black pepper. Add 5 cups water and bring the mixture to a boil over medium-high heat.
  2. Once boiling, stir in the rice and reduce the heat to medium. Cover and cook, stirring occasionally and adjusting the heat as necessary to maintain a controlled simmer, for 10 minutes.
  3. Stir in the lentils and let the mixture return to a simmer. Cover again, reduce the heat to medium-low, and cook until the liquid is absorbed and the rice and lentils are tender, about 20 to 23 minutes.
  4. Meanwhile, warm the olive oil in a large (12-inch) skillet over medium-high heat. When it�s warm enough that a slice of onion sizzles on contact, add the remaining onions. Stir to combine.
  5. Stir only every 3 minutes or so at first, then more often once the onions at the edges of the pan start browning. If the onions are browning before they have softened, dial down the heat to give them more time. Cook until the onions are deeply caramelized and starting to crisp at the edges, about 20 to 30 minutes. In the meantime, line a large plate or cutting board with a couple paper towels.
  6. Using a slotted spoon or fish spatula, transfer the onions to the lined plate and spread them evenly across. Sprinkle the remaining � teaspoon salt over the onions. They�ll crisp up as they cool.
  7. When the lentils and rice are done cooking, drain off any excess water (if there is any) and return the mixture to the pot, off the heat. Lay a kitchen towel across the top of the pot to absorb steam, then cover the pot and let it rest for 10 minutes.
  8. Remove the lid, discard the bay leaves, and smash the garlic cloves against the side of the pan with a fork. Add about �ths of the green onions and cilantro, reserving the rest for garnish. Gently stir and fluff the rice with a fork. Season to taste with additional salt and pepper, if necessary.
  9. Transfer the rice and lentil mixture to a large serving platter or bowl. Top with the caramelized onions and the remaining green onions and cilantro. Serve hot, warm or at room temperature, with yogurt and spicy sauce (optional) on the side.

*RICE NOTES: You can find brown basmati rice (Lundberg brand) at most well-stocked grocery stores, in the rice or health food section.   • 2 heaping cups loosely packed fresh basil (large stems removed)
  • 2 cloves garlic (chopped // 2 cloves yield ~1 Tbsp chopped)
  • 3 Tbsp raw pine nuts or walnuts (for nut allergies, omit)
  • 2 Tbsp lemon juice
  • 1 1/2 Tbsp nutritional yeast*
  • 2-3 Tbsp extra virgin olive oil (or sub other neutral oil)
  • 1 healthy pinch each sea salt & black pepper

Instructions

  1. Add rinsed potatoes to a large pot and cover with water until just submerged. Bring to a boil over high heat. Then reduce to medium-high heat to achieve a low boil. Cook uncovered for 15-20 minutes or until tender and a knife easily slides in and out.
  2. In the meantime, prepare pesto by adding basil, garlic, nuts, lemon juice, and nutritional yeast to a food processor and blending to combine. Stream in 2-3 Tbsp olive oil (amount as original recipe is written // adjust if altering batch size) a little at at time until a thick paste is formed. If trying to reduce fat, thin the sauce with water instead of additional oil. I like adding a little water to mine to make it more of a pourable sauce, but this is optional.
  3. Taste and adjust flavor as needed, adding more lemon juice for acidity, nutritional yeast for cheesy flavor, salt and pepper for overall flavor, or garlic for zing/bite. Transfer to a small serving dish and set aside.
  4. Preheat oven to 450 degrees F (232 C) and line a baking sheet with parchment paper. When the potatoes are soft and tender, place on the baking sheet and smash down with the bottom of a saucepan. For any larger potatoes, cut in half and then smash so they are still "bite size."
  5. Drizzle the potatoes with 1 1/2 Tbsp oil and season with a healthy pinch each salt and pepper (amounts as original recipe is written // adjust if altering batch size) . Roast for 20-25 minutes or until crispy and golden brown.
  6. To serve, spoon the pesto over the potatoes (you will have leftovers). Garnish with chopped basil or parsley and additional pine nuts (optional).
  7. Best when fresh. Store leftovers separately in the refrigerator. Potatoes will keep for 3-4 days. Pesto will keep for about 1 week (see notes for uses for leftovers). Reheat in a 350-degree oven until hot, then top with any leftover pesto.

Notes
*Nutritional yeast adds the cheesy flavor to the pesto. I purchase mine in bulk at Whole Foods, but you can also order it online. If not vegan, you can sub parmesan cheese.

  6. Once cooked, remove the potatoes from the oven and flip them cut-side up. Broil for 5-7 minutes, until they brown a bit. Sprinkle them with freshly chopped parsley, if desired.

  4. Finally, add the Beans, cubed Butternut Squash, and the remainder of the Vegan Stock to the Pot; bring everything to a boil over high heat, and then reduce the heat and simmer for 20-25 minutes, stirring every few minutes to help break down the Squash and make things nice and creamy. Add Salt and Black Pepper to taste, then divide into bowls, top with fresh Cilantro, and serve warm.

  • 1 tsp. chili powder

TOPPINGS OF CHOICE

  • Guacamole, salsa, dairy-free sour cream, hot sauce, etc.

INSTRUCTIONS

  1. Cook quinoa according to package directions with 1 1/2 cups water/broth. (I often use vegetable broth in place of water for more flavor.)
  2. Meanwhile, halve bell peppers and remove stems, seeds and ribs.
  3. Rinse and drain black beans, thaw corn, and slice green onions.
  4. In a large mixing bowl, add cooked quinoa and all other ingredients except bell peppers. Stir to combine, and adjust taste if necessary (salt, more seasonings, nutritional yeast).
  5. Preheat oven to 350.
  6. In a 9�13? baking dish, place pepper halves, and generously stuff them with the quinoa filling. Lightly press down to compact and fill all the crevices.
  7. Cover with tin foil and bake for 35-40 minutes. Remove foil, and bake 10 minutes more.
  8. Serve with any desired toppings.

TO MAKE THE SALAD:

  1. Heat oven to 425�F. Spread the crumbled ramen noodles and sliced almonds out on a baking sheet, and stir a bit to combine. Bake for about 5 minutes, or until the almonds and noodles are slightly toasted and golden. Remove baking sheet, and give the mixture a good stir to toss. Then return it to the oven and toast for an additional 3 minutes. Keep a very close eye on the mixture so that it does not burn. Remove and set aside.

  3. Serve immediately, or cover and refrigerate for up to 3 days. (This salad is much better eaten the first day, as the noodles lose their �crunch� the longer it sits, and the avocado may brown a bit. Still, it�s perfectly edible and enjoyable even after a few days!)

  • 1 medium red bell pepper, diced
  • 3 ounces sun-dried tomatoes, sliced (see Recipe Notes)

  • Kosher salt and ground black pepper

lemon basil cashew cream sauce:

  • 1 cup roasted, unsalted cashews
  • 3 cloves garlic
  • � lemon, juiced
  • 1 cup packed fresh basil
  • 1 cup water
  • � teaspoon Kosher salt

INSTRUCTIONS

  1. Boil the pasta: Bring a large pot of water to a boil. Once boiling, generously salt the water. Add in the pasta and cook to al dente, according to package directions. About 2 minutes before the pasta is al dente, add the broccoli florets to the pot to cook with the pasta as the pasta finishes cooking. Reserve 1 cup of the starchy pasta water. Drain the pasta and set aside.
  2. Make the lemon basil cashew cream sauce: Add all listed ingredients to a high-speed blender. Blend until smooth and creamy. Set aside, or store in an airtight container in the refrigerator for up to 1 week.
  3. Cook the veggies: Add the olive oil to a large skillet over medium heat. Once hot, add in the onion and bell pepper. Season with 1 teaspoon Kosher salt and � teaspoon ground black pepper. Cook, stirring occasionally, until the veggies soften slightly, 3-4 minutes. Once softened, add the sun-dried tomatoes and arugula to the skillet. Cook, stirring occasionally, until the sun-dried tomatoes soften and the arugula wilts slightly, 1-2 minutes.
  4. Finish the creamy vegan pasta: Once the veggies are ready, add the drained pasta & broccoli to the skillet. Pour the lemon basil cashew cream sauce over top. Toss to combine, adding a little of the reserved starchy pasta water as you go to reach your desired consistency. Taste and season additionally with salt or a squeeze of fresh lemon juice, as desired. Serve immediately. Enjoy!

30-Minute Vegan Red Curry Noodle Bowls #vegetariandinner #glutenfree

Ingredients
for the tofu:

  • 1 block extra firm tofu
  • Cooking spray
  • Salt
  • Pepper

for the curry sauce:

  • 1 tablespoon coconut oil
  • 1 large shallot
  • 4 garlic cloves , minced
  • 2 tablespoons grated ginger (about 2")
  • 1/4 cup red curry paste
  • 1 (14.5oz) can full-fat coconut milk
  • 1 (14.5oz) can lite coconut milk
  • 3 tablespoons low sodium tamari

for the add-ins:

  • 1 (10 oz) package gluten-free ramen noodles or rice noodles
  • 2 cups broccoli florets (+ stems, optional)
  • 1 cup sliced carrots
  • 1 cup sliced red pepper
  • 1 bunch scallions
  • Sesame seeds to sprinkle

Instructions

  1. Prepare the tofu: Preheat the oven to 425�F and spray a pan with cooking spray. Cut into cubes and add to the pan. Spray with another layer of cooking spray, sprinkle with salt & pepper and bake for 30 minutes, flipping halfway through.
  2. Prepare the sauce: While the tofu is cooking, heat the oil in a large skillet and add the shallot, garlic, and ginger. Saute for 2 minutes until the garlic is fragrant. Add the red curry paste, coconut milk, and tamari, and bring to a boil. Turn down the simmer and simmer until ready to serve.
  3. Prepare the noodles: Bring a pot of water to boil. Cook the noodles according to the package instructions. Add your vegetables when there are three minutes in the cooking. Strain everything and add it into the sauce along with the tofu.
  4. Make your bowls: Toss the noodles, vegetables, and tofu together until combined, then divide between four bowls. Sprinkle with scallions and sprinkle with sesame seeds.

  • 4 collard leaves
  • 1/2 cup hummus (any variety)
  • 1 cup cooked quinoa
  • 1 medium cucumber
  • 1 medium tomato
  • 2 carrots , grated
  • 1 avocado , sliced
  • 1/2 cup sprouts

Instructions

  1. To cook the leaves: Fill a skillet 1" high with water. Bring the water to a boil then, one at a time, submerge the collard leaves into the water allowing them to cook for 15 - 20 seconds. Move the leaves around in the water (flip if necessaruntil the whole leaf has turned bright green and is cooked. Repeat with remaining leaves. Allow the leaves to cool completely.
  2. To prepare the leaves: When ready to assemble, carefully cut the stem out of the leaf. Start towards the top, run your knife along the rib of the leaf, being careful not to cut a hole in the leaf itself. Cut all the way to the bottom of the stem and cut the stem off.
  3. To assemble: divide all the ingredients into four. Spread the hummus into the center of each leaf, then top with quinoa, cucumber, tomato, carrot, sliced avocado and finishing with the sprouts.
  4. To fold the wraps: fold in the sides. Take the edge facing you and fold it over the ingredients. Roll away from you as tightly as possible.
  5. Store the wraps whole and enjoy for 2 - 3 days.
